壓肉儀/失水率測(cè)試儀是肉制品水分壓縮性能檢測(cè)的專(zhuān)用儀器。該機(jī)也叫肉品系水力測(cè)定儀、肌肉失水率測(cè)定儀、保水性測(cè)定儀、肉類(lèi)壓縮儀、肉質(zhì)壓力儀、壓肉試驗(yàn)儀。系水力是肉質(zhì)的重要性狀，直接影響肉品加工的產(chǎn)量，也影響肌肉的嫩度。肌肉系水力的高低，取決于宰后肌肉的PH。國(guó)內(nèi)通常采用加壓重量法來(lái)度量肌肉失水率，以估計(jì)肌肉的系水力，即失水率越高，系水力越低。系水力（%）=（壓前肉樣重-壓后肉樣重）÷壓前肉樣重×100%。系水力：指肌肉蛋白質(zhì)在外力作用下保持水分的能力采用貯存損失、熟肉率及失水率...
